They cleverly transformed their first five old treasures into elegant multi award winning hotels that people naturally gravitate towards. Jose and Sandra developed their formidable style across thirty years and along the way they gathered a passion for the Mediterranean - a style that has become synonymous with the De Oliveira name and the smartest hotels around Melbourne. Bouzy Rouge has all the fashion sense of Europe, with pieces from the Marais region of France, known for its flavors of Morocco, Venice, Southern Asia and the Middle East.
From the main dining room and bar to the fully covered courtyard and private dining spaces, textures abound. There’s zebra fabric by Ralph Lauren, gilded crowns, a massive reconstructed Venetian mirror, deer’s antlers, exotic carved doors, giant clam shells holding peanuts on the bar, Scottish Knowl sofas from the middle ages and traditional shoes from Rajistan.
Powerful flavors are to the fore in all menus, with Euro tapas style plates and the signature roasted ‘share fare’ platters the real stars of the show.
